Sweet Potato Nachos


Umm .. let's talk about how amazing these bad boys are!!! 

Nachos is a FAV food of mine and I am SOOO happy to be able to replace those salty, carb filled delish chips with these!! 





Start with the sweet potato chips: 

1 sweet potato is about the right amount for a single serving, add a potato to each serving needed.
Slice sweet potato as thin as possible, or use a mandolin carefully.
Melt a tbsp  of coconut oil in a pan then dip the sweet potato slices in.
Sprinkle sea salt on slices and lay flat on parchment paper.
Bake for 10 min at 375 in the oven, then flip and bake 10 more min. *** Watch them CLOSE the last 10 min!!! Take off any that are browning!!

Taco meat: turkey, ground beef/sirloin, chicken ... your pick!

Brown/cook meat in sauce pan add seasonings:

1/2 tsp of garlic or 1 clove
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp chili powder
Sea salt and pepper to taste

Toppings to Preference! 
I like to use ... diced onion, diced tomatoes, jalapenos, and green onions. Most people add guac!  


To assemble the nachos, form a large circle with the sweet potato chips on a platter. Add the beef mixture into the middle of the circle, and then top with what you like! 



Ingredients needed:
1-3 sweet potatoes
1 tbsp coconut oil
parchment paper
1lb of ground meat of your choice
1/2 tsp garlic
1/2 tsp cumin
1/2 tsp chili powder
sea salt
black pepper
toppings of choice!
