Pico De Gallo

Homemade pico is a staple for me now.

It's simple.
It's clean.
It's delicious.
It's less than $3 a week.

I can put it on everything.

So everything you see here is literally less than $3 at the grocery store combined. Heck, most of this you can grow at home if you wanted! The best part about this recipe is you can use as little or as much of something as you want and completely ignore others! Don't like cilantro? Don't use it! Don't want the jalapenos? Don't use 'em! :)

-- 3 field tomatoes
-- 1 medium onion
-- 1 jalapeno (optional)
-- 1 lime
-- 1/2 of a bushel of cilantro (about a cup unchopped)
-- sea salt to taste

Dice tomatoes and onion into even sized pieces.
Finely dice jalapeno and cilantro.
Mix all in a bowl.
Cut a slit in the lime and squeeze generously over the whole mix.
Stir and taste.
If it's not to your liking add a dash of sea salt and re-squeeze lime for more flavor!
